Hello my friends! This time I want to share a very easy Zucchini bread recipe that does not require any kitchen electric tool. I hope you like it! If you like this recipe please left me a comment and tag me in social media!
1/3 Oatmeal milk ( I used Chobani plain oatmeal milk )
1 cup Organic cane sugar
2 teaspoons of Vanilla extract
1 teaspoon of flaxseeds
A dash of mineral salt( pink salt)
1 1/2 cup of Organic all purpose flour
1/4 cup of vegetable oil (or vegan butter)
1 cup of walnuts
1/2 Unsweetened coconut flakes
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
Cinnamon (I used 1 teaspoon approximately, because I love Cinnamon if you don't like Cinnamon use less amount but is highly recommended! )
A medium size Zucchini Shredded (about 1 cup approximately)
if you are allergic to the nuts you can substitute with chocolate chips and and when you add the mixture to the baking pan you can add oat flakes to decorate instead of the walnuts.
In a bowl, add the oil, almond milk, flaxseeds, cane sugar and vanilla extract. Whisk very well.
Now add the flour to the wet ingredients, the baking powder, baking soda, walnuts (reserve some walnuts to put on top of the mix)salt and cinnamon.
Stir until just combined, being careful not to over mix.
Pre heat your oven at 350F and cook between 50 to 60 minutes..
when you have already put it in the oven after 45 minutes check the bread with a toothpick
