Yellow Cauliflower rice

Cauliflower rice

I have to admit that I never was a fan of the Cauliflower until I prepared this recipe. This is a recipe full of flavor and different. I'm going to add a standard spices measure and then you can adjust the flavors. I hope you like it!


Ingredients:

1 Cauliflower head or 1 package of cauliflower rice

1/8 tsp Cumin powder

1/8 tsp Turmeric powder

1/8 tsp Curry powder

1 tsp Coconut Amino

Cilantro (optional)

Juice of a half lemon

1 Clove of garlic

Black pepper to taste

1/4 Unsweetened Coconut flakes

1tsp Vegan butter


Method:


1. We are going to saute the minced garlic in 1 tsp of vegan butter at medium temperature until is fragrant, we don't want burnt the garlic.

2. Add a little bit of water 1/3 cup is ok. Add the Cauliflower and the rest of ingredients. At this point if you need to adjust flavors you can add a little bit more Turmeric or curry powder. Cook for about 10 minutes until Cauliflower is tender, add the lemon juice before serve.

3. Garnish with Cilantro.
