Vegan Queso for Pasta

Hi my friends! Today I want to share my recipe of Vegan Cheese for Pasta. This recipe is so versatile. This recipe is for pastas but for example if you add jalapenos or chili in adobo sauce it will be the perfect Queso dip for Nachos. Is very easy and is not expensive. The best it will only takes you like 25 minutes to do the recipe.
1/2 Head of a cauliflower
1 big Yukon potato
1 cup of raw cashews ** see note
1 cup of plant base milk( I used Vanilla rice milk)
1/2 cup of water
2 cloves of garlic
Pepper and salt to taste(I prefer mineral salt Himalayan)
1 pinch of cayenne pepper powder
1/4 cup of Nutritional yeast
1 pinch of cumin powder(maybe 1/8 teaspoon)
1/2 teaspoon Turmeric (to add color)
1/2 teaspoon smoke paprika (to add color)
Cut your cauliflower in little pieces, also cut your potato in dices, put them in a pot with water. Is not necessary to cover them with water. Cover and cook for about 15 or 20 minutes until are soft.
Once your cauliflower and potato are ready transfer them to a high speed blender and add the rest of the ingredients. Blend until is creamy.
If you do not have a high speed blender I highly recommend to soaked your cashews for about 2 hours in hot water. Also you can put your cashews in water and put them in the microwave for 2 minutes. The turmeric and smoke paprika is to give color start with 1/2 teaspoon you can always add a little bit more to obtain the color but not too much because they have strong flavors.
