Vegan n' delicious Simple Chana Masala
First I want to say hello to everybody and wish you a wonderful weekend! As you know I like to prepare easy recipes in a budget also food that you can prepare in 30 minutes, today I'm going to share my Chana Masala recipe. Do you ever go out to a restaurant and all you can think is how they prepare a plate? , or you simply can't wait to go home and try to do the same but in your kitchen. Well two months ago I visited Dakshin Indian Bistro and I ate a delicious Chana Masala, so I tried to recreate the flavors in my kitchen.
I hope you like this recipe as much as me, I am a fan of the Indian Cuisine and spicy flavors.
3 cans of organic chickpeas
1 red onion
1/2 can of organic tomato paste
1 can of organic diced tomatoes plus 1 fresh tomato
4 organic garlic cloves minced
1 1/2 teaspoon of fresh ginger (if not you can substitute by ginger powder, but I preferred fresh ginger the flavor is better and more intense.)
1 1/2 teaspoon of curry powder
1 1/2 Garam Masala powder
1 teaspoon of smoke paprika
salt and pepper to taste (I used 1/2 teaspoon of himalayan salt and 1/4 of black pepper)
1 organic can of coconut cream
1/2 to 1 teaspoon of red pepper flakes( if you are not a fan of spicy flavors start with 1/2 teaspoon)
half lemon juice to enhance flavor, avocado and cilantro.
In a big pot add the garlic, onions, ginger and a little bit of water 2 or 3 tsp just to sauteed for 1 or two minutes, then add the drained chickpeas stir and start to add the coconut cream, diced tomatoes, tomato paste and all the spices. If it's too thick you can add a little bit of water, but not to much as it should be consistent. Cover and cook for about 30 minutes in almost low temperature.
I served mine with brown rice but if you are not allergic to gluten you can use Jasmine rice. Then garnish with cilantro add some veggies if you want or some Avocado slices and enjoy!
