Ultimate Veganndelicious Cuban Sandwich

In Puerto Rico many bakeries sell what they call Un sandwich Cubano or in english Cuban Sandwich. This is originally prepared with ham or pork with a special Adobo Criollo. So I decided to veganize the Cuban Sandwich with Jackfruit. And what is jackfruit?

Jackfruit is a species of tree in the fig, mulberry, and breadfruit family.

The jackfruit plant originated in southwest India, where it grows abundantly. And then, it spread to other parts of India, southeast Asia, the East Indies, the Philippines, Thailand, Malaysia, and Indonesia.

I love this fruit, when is cooked you can prepare Tacos, sandwiches, Pizza it has a meat texture but without the calories and fat from meat. I hope you enjoy this recipe as much as my family!


Ingredients:


1 can of Jackfruit

Adobo Criollo

Pickles


For the Adobo Criollo

Jackfruit

1 lemon juice

1/2 tsp cumin

1/2 tsp Smoke paprika

2 tsp Smoke liquid

2 tsp Apple cider vinegar

1/4 mineral salt (or sea salt) to taste

1/4 black pepper to taste

6 cloves of garlic

2 full tsp Natural oregano leaves or oregano powder.


Method:


First put your jackfruit in a pot only with water. I used 1/4 cup of water and cook for about 15 minutes. You can crush the jackfruit with a fork. Once is soft add the Adobo Criollo and cook for about 20 minutes more. The more you cook the jackfruit the more you cook it, the more tender it gets.

At this point you can adjust flavors to taste. For the sandwich use the bread you want it can be a regular Vegan bread or if you want Gluten free use GF bread, add vegan cheese, for this sandwich I used Follow your heart cheese Provolone, add Vegan mayo and mustard to the bread and don't forget to add pickles.
