Tofu Scramble

If you know me you know I love Tofu! So Let's do this recipe!

Welcome to my page again. I like Tofu because it makes me feel satisfy for a long period of time also it's contain a lot of protein which is good to your body. Every time I prepare Tofu I used different ingredients Tofu for me is so versatile. Tip: for this recipe buy Organic and extra-firm Tofu. Let's start:


1 small diced potato

4 cloves of garlic

1 small onion(it could be yellow or red depend on your preference)

1/2 Red bell pepper

1/2 cup of Mini Portobello Mushrooms (optional)

salt and black pepper to taste

1/4 tsp Turmeric powder

1 pinch of cayenne pepper

1/2 tsp Smoke paprika

2 tsp Organic Ketchup

2 tsp Organic yellow mustard

4 tsp Nutritional Yeast

1/2 cup oatmeal ( optional but recommended)

1 bunch Organic spinach (optional)

Ginger to taste


First add 1 tsp of Vegan butter in the skillet and sauteed the garlic, onions and red bell peppers for a few minutes, then add the mushrooms and potatoes, cut your potatoes in little cubes this way they are going to cook more faster. At this point you can add 1 or 2 tsp water to cook your potatoes also add the rest of the ingredients. Usually I incorporate all ingredients and adjust the flavors and almost at the end I add the Spinach and oatmeal. (oatmeal is my secret ingredient) why? it will absorb the liquid also is going to give texture and body to your Tofu scramble and for the Spinach we do not want to cook the spinach to much to maintain all nutrients and color. You can serve with avocado, spinach, bread toasts. To make this Gluten free instead of regular bread buy a GF bread, recently I had to go GF for a medical condition and personally I don't like GF bread flavors but I found this brand Kinnikinnick is Multigrain, GF, Nut free and dairy free and the flavor is good. For the butter I buy Earth Balance Soy free the one that is red because is GF, soy free and Non GMO and of course is Vegan too! I hope you like this recipe!
