Tofu Egg less Salad

This is for Tofu lovers only! This recipe is gluten free and is so versatile. You can use the egg less salad in a toast, alone, or you can do a wrap. Also you can prepare your own McDonald's egg muffin version by adding a slice of a Plant based cheese, like Daiya American Style cheese.


Ingredients:


1 Extra firm Tofu package

1 tsp garlic powder

1/2 cup of Roasted red and yellow peppers

1/2 cup of organic celery

1/2 organic white onion

1 tsp turmeric powder

1/2 to 1 tsp of Adobo Goya (for flavor)

6 tsp of Vegan mayonnaise (I used Vegenaise from Follow your heart)

a pinch of cayenne pepper powder

3 tsp of organic yellow mustard

4 full tsp of Nutritional Yeast


Method:


This is so easy, just cut the onions, celery and peppers in little pieces, take water excess from the tofu and mix all ingredients in a big bowl. Adjust flavors or add salt and pepper for taste but be ware that adobo contains salt. Also if you need to add more mayo or mustard is ok. Sometimes I add more mustard just because I love mustard flavor.
