Sweet Potato toast

Yes, a Sweet potato toast! Sweet potatoes are rich in antioxidant called beta carotene.

Sweet potatoes are nutritious, high in fiber, very filling, and delicious. They can be eaten boiled, baked, steamed etc...They are usually orange but also found in other colors, such as white, yellow, and purple.

Ingredients:

1 sweet potato

Toppings:

Avocado, hummus, tomatoes, cashew butter, bananas, blueberries, fermented food.

Method:

1. Ok, if you have a Mandoline slicer for vegetables you can use it. Slice the sweet potato and after you slice the sweet potato put them in a toaster and it will be cooked and ready for the toppings.

2. If you do not have a Mandoline slicer for vegetables cut your sweet potato as thin as possible. After you cut them in thin slices transfer them to an air fryer at 400F degrees for about 15 minutes. Mines were cooked in the air fryer and I did not used a Mandoline slicer.

3. Don't have an air fryer? Use the oven. Same procedure 400F degrees until they cooked and golden. Watch to be sure they don’t burn! For the toppings: You can add Hummus with tomatoes slices, Guacamole with tomatoes, peanut butter with bananas.. Lots of combinations! For my toasts I used hummus, avocado, tomatoes and fermented beets, cabbage and carrots.
