Street Tacos

Who doesn't like tacos? Yesterday I was watching a Food Network show and it was about Carnitas. Of course I don't eat meat but that show inspires me to prepare the carnitas but with Jackfruit. So I hope you like this recipe! BTW my family approved the flavors and is oil free.

Ingredients:

2 cans of 20 oz of Jackfruit

1 tablespoon of Liquid aminos from Bragg's

1 tablespoon of liquid smoke

1/2 up to 1 teaspoon of Molasses

1/8 teaspoon black pepper

1 tablespoon of oregano

1 teaspoon of garlic powder

4 to 5 cloves of garlic

1/2 up to 1 teaspoon of Chipotle powder

1/2 teaspoon of cayenne (use desire amount it will depend if you like spicy or not)

1/4 teaspoon cumin powder

A dash of chili powder (or you can add a little bit more it depends again if you like spicy food)

1/2 cup of water or low sodium vegetable broth

1 can of organic diced tomatoes

Method:

First drain water from jackfruit and rinse the jackfruit.

In a non-stick skillet on medium-high,Add jackfruit and 1/4 cup of water and cook until is soft, then with Mash with a potato masher. Then add the rest of ingredients and cook for about 20 or 25 minutes left the jackfruit absorb all the flavors. Adjust the flavors. If you are a person who doesn't like spicy food start with a dash of cayenne and chili powder just add the desire amount until you have the desire spicy level that you want.

For the Guacamole:

4 small Organic Avocados

Chile lime Seasoning ( you can substitute with Mineral or sea salt)

1/2 lemon juice

Cilantro (desire amount) optional but so good to add flavor

Method:

Just mash the avocado with a fork or potato masher add the desire amount of Chile Lime Seasoning, the lemon juice and cilantro and mix. If you do not like Chile lime Seasoning just add mineral salt.
