Spicy quinoa and lentils bowl

I don't know if it is because I am from the Caribbean but I love spicy food since I was a little girl! Do you like spicy foods? if yes you will love this recipe because you can play with the spices and adjust the flavors!
Ingredients:
1 cup cooked quinoa
1 cup cooked Green lentils
1/2 red onion
1/2 red pepper
1/2 green pepper
1 cup organic can of sweet corn
3 or 4 tsp of any enchilada sauce
1 garlic clove
salt and pepper
1/2 diced jalapeno
1/2 tsp smoke paprika
1/2 tsp turmeric
1/4 tsp cumin
1/2 lemon juice
cilantro
1/2 tsp coconut oil or less
Method:
In a skillet add the coconut oil, onions, garlic and peppers and sauteed for about 1 or 2 minutes. Meanwhile cook your lentils and quinoa as the package directions.
Then add the corn and the dry spices- smoke paprika,cumin, turmeric ,salt and pepper to taste to the skillet and cook for 5 more minutes. If it is to dry do not add more oil instead add 2 or 3 tsp of water, at this point if your quinoa and lentils are ready add them and stir for a few more minutes and add the enchilada sauce I used 3 tsp but again feel free to add more! I love sauces, you can find the Enchilada sauce at any grocery store mine is from Trader Joe's. At this point you can adjust all the flavors if you want. Put more amount of cumin or maybe you want your bowl more spicy then add more jalapeno.
To serve just garnish with cilantro add the avocado and squeeze lemon juice over the quinoa and lentils bowl.
