Soy-rizo Garbanzo beans Rice

And I continue to veganize everything I see and today was not the exception! I'm going to share my version of rice with garbanzo beans and chorizo. And yes we have Vegan chorizo and the one that I used is Gluten free too. So this recipe is totally Gluten free and Oil free. The only oil is the fat from the Vegan chorizo. Enjoy!


Ingredients:

3 cups of cooked Garbanzo beans( you can soften the garbanzos or use organic garbanzo cans)

3 cups Bastmati brown rice

5 1/2 cups of water

1/2 tsp Turmeric powder

1/2 tsp Smoke paprika

2 tsp of Amino liquids (Natural soy sauce from Bragg's)

3 cloves of garlic

3 small green peppers or 1 cup of chopped green peppers

1/2 cup of Vegan Chorizo( feel free to use up to 1 cup)

1/2 chopped purple onion

1/4 cup sun-dried tomatoes( without oil)


Method:


First we are going to sauteed the garlic, onions and peppers. Instead of oil I always use water or veggie broth, just add a little bit of liquid 3 to 4 tsp and cook for about 1 or 2 minutes, then add the vegan chorizo, the garbanzo beans, Amino liquid and sun-dried tomatoes stir and cook for about 1 or 2 more minutes and add the rice and the water. Stir a little bit to mix all the ingredients and cook for about 25 minutes. Adjust flavors if you need more flavor but remember that the Amino Liquids contains sodium so be careful if you need to add more salt. My rice was ready in 20 minutes it's depend of what kind of pot brand do you have at home. Garnish with Cilantro, you can serve your Rice with a salad, Vegetables or alone with Avocado.
