Sofrito my way

What is Sofrito? Is an aromatic base for rice, stews ,beans and other dishes. We can prepare the sofrito in different ways. Sometimes I use only green peppers and sometimes I add both green and red peppers. The same with the cilantro and culantro. When I don't have Culantro leaves I just use more cilantro.

4 cajun belle peppers (they are a little bit spicy)

10 to 12 cloves of garlic

A big hand of cilantro

2 culantro leaves (if you live in US you can find this on the Asian markets and Hispanic grocery stores)

1 yellow medium size onion

1 teaspoon of apple cider vinegar

Salt and pepper to taste (optional )

1 red bell pepper

1 green bell pepper

Method:

Add all ingredients to food processor. If desired, add a little bit of water to blend. Blend to desired texture.

Note: Store in an airtight glass jar in the refrigerator.

or freeze in ice cubes.
