Pasta soup in the Instant pot

If you like pasta check this out! Penne pasta soup with vegetables all in one pot! Ready in 15 minutes approximately in the instant pot! Why I prefer the Instant pot? The pressure cooking process develops the flavors of your ingredients quickly. Also the soups taste as if they had been simmering for hours! Isn't wonderful? And cook more faster!

Ingredients:

2 cups Organic Penne pasta

1 can of Marinara sauce ( your favorite)

2 cups oil free low sodium vegetable broth (mine is homemade)

3 cups of waters

1 cup of Organic Broccoli florets (a little bit more if you want)

3 Organic carrots

1 yellow onion

2 cloves of garlic

1 teaspoon of oregano

1 teaspoon of dry basil

1 cup of Organic Fire roasted tomatoes( I used 365 brand from Whole foods market)

1 fresh Organic tomato

Herbamare to taste( is a substitute for salt and is low in sodium. If you do not have Herbamare you can use mineral salt.

1 teaspoon of maple syrup- Optional

Method:

1.Preheat your Instant pot in the Pressure cook setting. While is pre heating cut your onions and garlic, add little bit of vegetable broth and saute your onions and garlic for 1 minute or two.

2. Add the rest of the ingredients. At this point adjust flavors. If you feel is too acidic you can add 1 teaspoon of maple syrup. I did not used maple syrup for me was perfect! Cover the soup and set your Instant Pot for 15 up to 19 minutes.

When the alarm sound just serve and enjoy!

Tips to serve:

Add fresh basil, vegan parmesan or vegan shredded cheese!
