1 cup Gluten free oats
2 tsp baking powder
1/2 tsp cinnamon
1 tsp Maca Powder (optional)
2 tsp Hemp seeds (optional)
1/2 ripe banana
pinch of salt
lemon zest (optional)
1/2 cup of any Plant based milk( I used Almond milk )
1 up to 2 tsp Apple cider vinegar
First add all dry ingredients in the high speed blender, blend for about 1 minute, then add the vanilla, lemon zest, banana, apple cider vinegar and milk.
What I do: I always start with 1/2 cup of milk if I noticed that the mix is too thick I start to add more milk carefully until I get the desired consistency.
At this point transfer your mix to a bowl and wait 5 or 10 minutes why? to let the baking powder interact with the vinegar. The vinegar function is to create fluffiness in the pancake. Once is ready add GF vegan butter to the skillet and cook until is golden in both sides. This recipe is gluten free but feel free to use any kind of vegan butter.
once your pancake is ready you can add fruits more lemon zest and the unsweetened coconut flakes for garnish your pancakes, add maple syrup and Enjoy!
