Oatmeal casserole 

Baked oatmeal is a traditional and comforting breakfast, something that you and your family are going to enjoy. Is very easy to prepare. There are endless variations — the recipe is easily adapted with whatever fruits and nuts you have on your pantry. For this recipe you are going to need a 9" x 6 " baking pan. This recipe is a portion for 2 people. The baked oatmeal keeps me full all morning long. Enjoy!


1 cup Gluten free oatmeal

1 red apple

1 cup of your favorite plant based milk

1 teaspoon of maple syrup

A dash of salt

1 teaspoon of vanilla extract

1/2 teaspoon of cinnamon


Preheat oven to 350 degrees F

In a large bowl, mix together oats and the rest of the ingredients. Reserve some apple slices to add them to the top, and bake until liquid disappear. It can take 20 to 25 minutes approximately. Do not cover. Before serve you can garnish with unsweetened coconut flakes, walnuts and serve. Add more cinnamon.
