Mofongo is a fried plantain-based dish from the island of Puerto Rico. Usually they prepared the mofongo with Green Plantains and they fry the Plantains. Mine is not fried and is prepared with ripe bananas or Yellow plantains.
1 or 2 Ripe bananas or Yellow plantains
2 or 3 cloves of garlic
1 tablespoon of vegan butter
Salt to taste
Cut the bananas in half (do not peel the skin) and in a medium saucepan cover them with water and cook at a medium high temperature for 20 minutes or until they are soft. When the skin feels warm peel it out and save a little bit of water. Using a pilón (wooden mortar ) mash the plantains, with a little bit of water, garlic, butter and a little bit of salt. Shape into small balls and enjoy!
You can eat as appetizers, or for dinner with rice and beans!
