Mediterranean Tofu Scramble
Good Morning! Today is a Sunny beautiful day here at Ohio and my husband asked me to prepare a tofu scramble. But I really wanted a different flavor. I love Mediterranean food so I decided to recreate some of those flavors. As always if you like recipe left me a comment. If you prepare my recipe use #veganndelicious.
1 Extra firm package of organic Tofu
1/8 teaspoon or less of curry powder
1 tablespoon of Turmeric powder
2 tablespoon of Nutritional yeast
12 or 15 green olives cut in slices(reserve a little bit of green olives liquid 3 or 4 tablespoons)
1 small yellow onion
1 cup Sundried tomatoes (without oil)
1 cup fresh basil (if you don't like basil use less)
3 little mini sweet red peppers cut in slices
Mineral salt to taste
1 teaspoon of organic Dijon mustard
If you don't have a Tofu press just put your tofu in a1 towel paper and put something heavy in the top to eliminate the excess of water.
1. First heat your pan or skillet in high add the onions, peppers and green olives and add liquid from the olives to sautee the veggies. If the liquid evaporates add a little bit more you can use water too.
2. Incorporate the rest of ingredients including the fresh basil, give a good stir to mix all the ingredients change the heat to medium low and cook for about 15 to 20 minutes until the excess of water disappear.
You can eat your Tofu scramble alone, with bread, in a wrap or in taco shells!
