Jackfruit Puertorrican Pernil

Hey my friends this is my new Pernil vegano recipe. As many of you know I am from the Caribbean island of Puerto Rico and I miss my Puertorrican food. Specially when the holidays are coming. So pernil is pork. But I can use Jackfruit to do Pernil because its a versatile fruit and it doesn't have any flavor so its very easy to add the pernil adobo.

Ingredients:


3 Jackfruit cans

Mineral salt and black pepper to taste

2 teaspoons of oregano ( you can add a little bit more)

4 cloves of garlic

2 tablespoons of any good Extra virgin olive oil


Method:


  1. Rinse the Jackfruit well.

  2. When you are rinsing it, you can crumble it with your hands a little.

  3. Transfer the jackfruit to a non stick skillet.

Adobo :

Crush the garlic very well and mix with the oil, salt, pepper and oregano

Marinate the jackfruit.

4. Pour the marinade into the Jackfruit and mix very well.

5. Cook in the non stick skillet for about 15 minutes.

6. Pre heat your oven at 400F

7.Pour the jackfruit onto a baking dish and bake for about 20 minutes. So just let it brown a bit and it's ready to serve.


Tips:

You can serve with rice, a Pasta salad or a Potato salad.

Also for a better flavor you can marinate the jackfruit the night before. Just add the jackfruit and the adobo in a ziplok bag.
