How to roast tomatoes and spaghetti Squash in the air fryer 

It is very easy and is going to take 5 to 8 minutes for the tomatoes and 28 minutes for the squash.

Ingredients for the roasted tomatoes:

1 or 2 regular tomatoes

Dry basil

Garlic powder

Salt and pepper to taste

Method:

Cut the tomatoes in slices not to thin.

Add parchment paper in the air fryer basket add your tomatoes slices and add a little bit of all the ingredients. There is no measure in this, just add a little bit of each ingredient. Close you basket and cook at 360F degrees starting with 5 minutes. I cooked them exactly fo 8 minutes. It depends on your air fryer brand. My recommendation start with 5 minutes doing a 2 minutes increment until is roasted.

Ingredients for the Butternut squash;

1 Butternut squash 4 cloves of garlic Salt and black pepper to taste 1/2 or 1 teaspoon of vegetable oil or avocado oil.

Method:

Cut the Butternut squash in half

Prepare and adobo with the oil, garlic, salt and pepper mix and brush the two half with it.

Place both halves, with the cut side up, in your air fryer basket and cook at 360 ° degrees for about 28 minutes. If you need more minutes because the Butternut squash is biger make increments of 2 minutes.

When cool to the touch, use a fork to scrape and fluff the strands from the sides of the squash.

Serve as a regular spaghetti with tofu, soy meat or just sauce. Here are mines, I served with my Garbanzo meat. Spaguetti sauce with roasted tomatoes on top.
