How to prepare Guineos in Escabeche sauce

Since I'm not longer living in Puerto Rico I missed the puertorrican food. Its so hard be in the US and not have the food that you grow up with. Thanks God I discover that I have a grocery store call La Michoacana that sells international food and I can find a lot of puertorrican food and products like #Goya. Guineos in escabeche is green bananas not plantains that you can eat alone, warm, cold or with rice. Today I'm going to share my recipe, I hope you like it!


Ingredients:


Approximate 2 or 3 pounds of Green Bananas

1 big yellow onion if you prefer you can use 2 for more flavor

6 cloves of garlic

4 bay leaves

1 cup white vinegar

2 cups Extra virgin olive oil

1/2 to 1 of cup water

salt to taste

12 whole black peppercorns ( I had to used black peppers from my grinder, if you only have a pepper grinder just put enough to taste)

1/2 cup plant based milk

Green Olives( just add a few, I used like 10 green olives)


Method:


Place the bananas covered in boiling water, also add 1/2 cup of plant based milk, I use the milk to prevent that bananas obtain a dark or brown color, is a trick that I learned from my mom. Add a little salt to taste. Boil them for approximate 20 or 30 minutes, be careful because if you boil them for too long they will come apart and too soft.

While you are cooking the bananas, put the rest of the ingredients into a pot to prepare the Escabeche sauce. Stir them and put a high temperature then reduce the heat to low and cook the sauce for about 1 hour. In my experience the more you cook the sauce the better will be the flavor.

Ok back to the bananas, once your bananas are fully cooked, peel off the skin and cut them in 1 inch size rounds, transfer your bananas to a big bowl.

Then once your sauce is ready add the Escabeche sauce stir and mix. Cover them at least 2 or 3 hours. In my opinion is better if you prepare this recipe in advance and wait 24 hours why?

They taste better the next day, but if you want to eat this the same day just prepare them in the morning and the the bananas will be so flavorful in the evening.


Tip:

Before you put the bananas to boil make an incision with the knife along the banana, this will make the peeling process easier once they are ready.
