Green Lentils peas artichokes stew 

This recipe is oil free!

Ingredients:

1 cup green lentils

1/2 Frozen Artichokes package (mine is from Trader Joe's)

1 cup green peas

1 Yukon potato (medium size)

1 big carrot

5 cloves of garlic

1/2 half yellow onion

1/2 cup of Sundried tomatoes Julienne cut( without oil mine is from Trader Joe's and is oil free.

Herbamare Spicy sea salt to taste and or mineral salt.

2 teaspoons of dry basil

2 teaspoons of White wine vinegar

1 tablespoon of tomato paste.

4 to 5 cups of water or Low sodium oil free vegetable broth. (I used water)

Method:

Cut your potatoes, carrots, onions and garlic. In a soup pot saute your vegetables with liquid until they are fragant. If the liquid (a little bit of water) evaporates add more. This process is going to take 2 or 5 minutes . Now that you sauteed the vegetables add the water and the rest of the ingredients and cook for about 20 or 25 minutes first in high temperature until boil and then medium low. Check the liquid from time to time we want a stew not a soup. However if it is too thick add more liquid. Adjust flavors.
