Garbanzo beans soup!

Ingredients:


1 cup of soften chickpeas or 1 can of organic chickpeas

3 to 4 cups of water

1 Vegan hot dog or 1 vegan chorizo

2 Fresh tomatoes

3 to 4 bay leaves

4 cloves of garlic

1 small onion (I used the purple onion but you can use the yellow onion too)

Spicy Herbamare to taste

( if you do not have Spicy Herbamare you can use mineral salt and a dash of cayenne)

1 medium Yukon potatoe (cut in dices)

1/2 Red bell pepper

2 to 3 drops of liquid smoke(optional)

A bunch of spinach


Method:

1. Sautee the onions, garlic, red bell peppers and chorizo instead of oil use a little bit of water or vegetable broth. If the liquid evaporates add more. This can take 2 to 5 minutes.

2. Add the rest of the ingredients except the spinach.

3. Cook for about 20 minutes to develop the flavors.

4. When your soup is ready add the spinach and adjust the salt if you need to adjust your flavors.

Serve and enjoy!


Tips:


For toppings you can add croutons or/and Vegan cheese.
