Easy Tomato soup
1 can of Organic full fat Coconut milk
3 cups of water
3 fresh tomatoes
1 cup of Fire roasted tomatoes (Organic can)
2 tablespoon of dry basil
1 teaspoon of oregano
1/4 teaspoon of vegan vegetable bullion
1 teaspoon of maple syrup
Herbamare to taste( is a low sodium substitute for salt) but if you don't have Herbamare feel free and use mineral salt(Himalayan salt)
4 cloves of garlic
1/2 yellow onion
1. Sautee Onions and garlic for 1 or 2 minutes in a little bit of liquid, it could be water or vegetable broth. If liquid is evaporated add more.
2. Add the rest of ingredients, and cooked for about 15 minutes in medium high.
3. With an immersion blender, blend until is creamy, adjust flavors, cover and cook for 15 more minutes.
If you do not have an immersion blender transfer everything to a high speed blender.
Tips to serve:
You can serve alone, with rice or a Grilled cheese sandwich.
