Easy Mexican rice

This rice is one of my favorites is very easy and you don't have to use complicated ingredients. Also you can add all the vegetables you want.

2 cups brown rice

4 cups of water

1/2 Organic can of sweet corn

1 organic can of diced tomatoes

1 tablespoon of sofrito(optional)

2 or 3 cloves of garlic

1 teaspoon of Vegan Chicken bouillon

1 sweet banana pepper

1 teaspoon Chipotle powder

1 teaspoon of Taco Seasoning

1/2 teaspoon of chili powder

1/2 cumin

1/2 purple onion

1 handful of cilantro

1/2 lemon (to garnish)


Heat a little bit of liquid (water or vegetable broth) in a large skillet over medium heat. Add garlic, peppers and onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes. If the liquid evaporates add more. Add the rest of ingredients. Bring to a boil; cover, reduce heat and simmer until rice is cooked. This can be between 16 to 20 minutes depending on your cookware set. Serve immediately and garnish with more cilantro now you can add the juice of half lemon if you want.
