Easy Garbanzo Stew
Hi my fellows followers! Today I want to share with you my Garbanzo stew recipe. Is very easy and the majority of the ingredients you can find them in your pantry. As you know I have a full time job and I always try to so simple but nutritive food. And this recipe is one of them
2 cans of organic Garbanzo beans
1/4 teaspoon of oregano
1/4 teaspoon of cumin
1/2 teaspoon of Turmeric powder
A dash of cayenne pepper
2 Bay leaves
4 to 5 cloves of garlic
1/2 onion (for this recipe I used purple onion)
2 medium Yukon potatoes
1 big carrot
1/2 red bell pepper
1/2 green bell pepper
2 Roma tomatoes
Approximately 1/4 of Vegan Chorizo (soyrizo)
Mineral or sea salt to taste
**For the water read the notes
Pre-cut the carrots, peppers and potatos left them apart.
In a soup pot saute your garlic, onions and peppers with a little bit of water. If the water evaporates add more, do this for about 1 or 2 minutes. Add the chorizo, carrots, tomatoes and potatoes and cook for about 2 or 3 minutes, then add the dry spices and Garbanzo beans and do the same. Let them absorb the flavors a little bit. Last step add water. Cook for about 5 minutes in High temperature and then let the stew cook for about 20 to 25 minutes.
To measure the water I used the cans, so each can has 15.5 oz (2 cans of water)
Serve with Jasmine rice and vegetables or Brown rice.
