Easy Black bean Tortilla soup

This is a very easy and delicious soup that you can eat in 10 minutes when you prepare this in an Instant pot! Why an IP? Basically, it’s an electric pressure cooker, slow cooker, steamer, rice cooker, and yogurt maker, all in one. And you can cook delicious meals in between 10 to 15 minutes. Isn't wonderful? I love mine and I used it almost every day!

Ingredients:

3 organic cans of black beans( with the liquid)

1 small to medium vidalia onion

2 sticks of celery

1 organic can of corn

3 to 4 fresh tomatoes (substitute 1 can of diced tomatoes)

4 to five cloves of garlic

1 teaspoon cumin powder

1 teaspoon of chili powder

1 teaspoon of Taco seasoning

1 teaspoon of vegan vegetable bullion

4 1/2 cup of water

1 tablespoon of organic tomato paste

A bunch of cilantro

1 lemon juice

Method:

First pre heat your IP in Pressure Cooker and 10 minutes in high.

Wait until is hot. While you are pre heating your IP cut your onions, cilantro tomatoes, celery and garlic.

Once your IP is hot add a little bit of water and sautee your onions, garlic and celery just in water. If the water evaporates add more, this is going to take for about 2 to 3 minutes. After is fragant add the rest of the ingredients to the instant pot. Give it a good stir and cover, adjust flavors. Cook for ten minutes. Serve soup with avocado slices, cheese, cilantro if desired and more tortilla strips on top.

Note:

For the tortilla strips I just used regular Whole wheat Tortilla and cut them in strips.

Pre heat the oven at 379F degrees and cooked them until browned. You have to stay pending because they are going to be ready probably in 5 minutes! and you don't want to burn the strips!
