Easiest Potato Salad!

This potato salad is delicious and you can prepare it in 30 minutes or less! It is a single portion. If you want more, just double or triple all the ingredients.

Ingredients:

2 medium Yukon potatoes or Gold potatoes

1 or 2 tablespoons of Vegan Mayonnaise

1 teaspoon of Apple cider vinegar

1 tablespoon of organic yellow mustard

1/2 cup of chopped celery

1 cup of leek

1 fire roasted red peppers (cut in dices)

1 tablespoon of liquid from the fired roasted red bell pepper can.

1 or 2 cloves of garlic

Salt and pepper to taste!

Note:

I like the skin of the potato but you can peel the potato skin if you want.

First cut the potatoes in small pieces.

Bring potatoes to a boil in large pot of cold water that's been liberally salted. Reduce the heat to medium high or a lightly rolling boil and cook for 10-15 minutes or until the potatoes are soft. While you are cooking the potatoes , we are going to wash and rinse very well the leek and we are going to cook the leek in a little bit of water instead of oil with salt and pepper to taste until is fragrant. If the water evaporates add more. Some people add butter but this is an oil free recipe. Once is done set apart.

Allow the potatoes to cool. Probably is going to take 10 minutes. Then transfer you potatoes to a big bowl and add the rest of ingredients and mix. You can eat immediately or Chill for at least 1 hour or overnight before serving.
