Crispy Garbanzo beans Tacos

This is a very easy recipe, you can cook your crispy Garbanzo beans in the air fryer or in the skillet. I added a picture of the tortillas that I used! So you can see the brand and the ingredients.


1 can of Chickpeas

1 teaspoon of Taco seasoning

Corn tortillas

Kale 2 or 3 big leaves

Red or multi color mini peppers or 1 red bell pepper

1 or 2 Roma tomatoes

2 or 3 tablespoons Vegan Mayonaise

1/2 lemon juice

1 to 3 teaspoons of Chipotle powder (or maybe more depends on you)

1/2 teaspoon garlic powder

Refried beans are optional but highly recommended!

For the Crispy Garbanzo :

Add you Garbanzo beans to the bowl and add the taco seasoning, mix everything well and then transfer them to the air fryer basket. Cook at 390F between 10 to 12 minutes. It depends how you like the bean if crispy or extra crispy. Just start with 10 minutes and then if they need to be more crispy add 2 or 3 more minutes. If you do not have an air fryer sautee the beans in a non stick skillet until they are brown or golden.

Chipotle sauce :

In a small bowl mix your Vegan Mayonnaise, chipotle powder and garlic powder very well. I added a little bit of water maybe 1 or 2 teaspoons it will depend on how thick you want your sauce and set apart.

Peppers and kale:

If you don't want to use oil use a nonstick skillet or pancake grill. If you want to add oil use 1 teaspoon of avocado oil. In my case I don't use oils, I think that oil is unnecessary. They just add more fat that you don't really need and is bad for cholesterol and your heart arteries. Just sautee your peppers and kale for a few minutes add a little bit of salt.


For homemade Refried beans:

For the Refried beans you can do it or you can buy a can of Refried beans. In my case I just opened a can of black beans and used half including the liquid, then I added garlic powder, cumin powder and onion powder. Because it was only for me I just added 1/2 teaspoon of each one but if you are doing the entire can just double portions and adjust the flavors.

Stir constantly until vegetables are soft and just beginning to brown, about 3-4 minutes add water from the can and then mash completely with a potato masher or with a fork. Add salt to taste and voila!

To assemble the taco

1. Add the refried beans to the tortilla

2. Add the Crispy Garbanzos

3. Add the peppers and kale

4. Pour the chipotle sauce

5. Squeeze lemon juice (optional)
