Coquito- Puertorican vegan beverage
Updated: Dec 30, 2018
Hi guys! I hope you are all having a terrific wonderful Holidays! It's been a while since I've posted anything. But my full time job keeps me very busy. Today I'm back with this wonderful recipe of Coquito, its similar to Eggnog and its a traditional beverage of Puerto Rico. People prepare this for Christmas time. I hope you like my recipe. Its a recipe that I recommend to put in the fridge for a few hours and to drink on the same day. If you leave the drink in the in the fridge until the next day be sure you give a good stir before serving because it contains coconut cream.
Ingredients:
1 cup water
1 can of coconut milk( I always use Coconut milk from Goya)
1 can of coconut cream (from Goya too)- If you are going to serve in immediately if not use another can of coconut milk.
1/3 cup of raw cashews
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cloves
1/3 cup of Rum Bacardi( it has to be white rum)
Method:
Easy , add all ingredients except the rum to the high speed blender, blend until is completely creamy 1 or 2 minutes. Now you add the rum I used 1/3 cup of rum but if you want to add more you can, blend again and transfer to a bottle. Put the Coquito in the refrigerator for one or two hours and serve.
Enjoy!
