Congri Rice (cuban cuisine)

Ingredients:

2 cups Jasmine rice

4 cloves of garlic

1/2 vidalia onion

1 teaspoon of vegetable vegan bullion

6 Green olives(optional but recommended cut in half)

2 or 3 bay leaves

1/2 red bell pepper

1 can organic black beans(I used the can liquid)

2 cups of water (maybe a little bit more)

1/4 cumin powder

*I did not used salt but feel free to add mineral salt if you need to adjust the flavor.

Method:

1. Sauteed your garlic, pepper and onion for a few minutes with a little bit of water or vegetable broth. If liquid evaporates add more. This is an oil free recipe.

2. Add the beans can with liquid and the vegetable bullion give a good stir and add the rest of ingredients. Stir again and cover.

Cook for about 20 minutes or until rice is done.

Tips to serve the rice:

You can add a salad, fried yellow plantains or vegetables.
