Brown rice and lentils or Mujadara
Lebanese dish made of Basmati brown rice and lentils.
Ingredients:
1 1/2 cup of brown lentils
1cup of Basmati brown rice
Salt and pepper to taste
1 teaspoon of cumin powder (maybe a little bit more depends on you)
2 bay leaves
2 cloves of garlic (crushed)
2 cups of water for the rice
1 and a 1/2 purple onion (slices)
2 tablespoon parsley
Method
Cook lentils as package instruct
While you cook the lentils add vegetable oil to a big skillet and sauteed your onions until they are brown and caramelized. Add a dash o salt and cumin powder. Once they are brown and caramelized set apart.
Now that the lentils are soft drain the water and add the rice, garlic,salt, 2 cups of water, parsley and the bay leaves. Bring to a boil and turn the heat down to low. Cook the rice for about 30 minutes. Approximately.
Taste the rice for seasoning. Serve with the reserved caramelized onions.
Once the rice is soft serve with the onions on top a little bit of extra virgin olive oil and garnish with more parsley.

Also you can squeeze lemon juice!
