Asparagus Creamy soup

I don't know if you heard that we are having a Polar Vortex weather here in Ohio. Today feels like -30. Residents said this is historic! And I heard that too in the news this morning. And guess what? I decided to prepare this creamy soup and it came out beautifully so delicious! And good for the cold weather. Enjoy my recipe!


1 or 2 pounds of fresh Asparagus

1 large Yukon potato

1 teaspoonfuls Vegan butter

1 teaspoonful of Vegan Better than Bouillon no chicken base

1 tablespoon Blend spices (see notes)

Black pepper to taste

1 yellow onion

2 cloves of garlic

6 cups of water or 6 cups of Veggie broth low sodium

1/8 teaspoonful of cumin powder

1/4 cup of chopped cilantro

2 bay leaves

1/4 cup of Vegan plain yogurt

A pinch of cayenne pepper

Dill powder to garnish


Method:

In a soup pot you are going to sauté the onion and garlic in the vegan butter for a few minutes. Wait until you see that the onion is translucent .While you cook the onion and the garlic, cut the asparagus into halves and cut the potatoes into squares. Once the onions are translucent add the rest of the Ingredients except the yogurt. Use high temperature first at least 5 minutes and then medium low and cook for about 20 minutes. 5 minutes before add the yogurt and then with the Immersion blender blend the soup until is creamy and soft. If you do not have an immersion blender transfer the soup to a High speed blender and blend for 1 or 2 minutes. To finish garnish your soup with fresh pepper and dill. Enjoy!


Note about Blend spices:


Blend spices is a group of dry spices that I like to use when I prepare soups. What I do is that I take 1or 2 tablespoon of each one and put them in a spice grinder or blender to mix well and pulverize the dried spices. Transfer the blend to a jar with a tight-fitting lid. You can store this jar in a cool and dry place. Below are the spices and amount that I use for my Special spice blend.


Ingredients:

2 teaspoons garlic powder

1 tablespoon dried basil

1 tablespoon onion powder

tablespoon dried thyme

2 tablespoons Nutritional yeast

2 teaspoon smoke paprika

1/2 teaspoon Turmeric
