Arroz con dulce

Hi, again. If you follow me in my Instagram account you know that I am a Puertorican girl living in Ohio. I always miss my island, its' customs and its' meals. Today I want to share with you another Christmas typical plate from PR, its Arroz con dulce( sweet rice) a type of dessert. I hope you like this recipe, its reminds me a lot when I was a child and my mother prepared it for me and my family.
1 cup rice (short grain) I used Jasmine rice
2 cans of coconut milk
2 cups water
1 cup brown sugar( you can add more if you like more sweet)
1/2 tsp mineral salt(I used Himalayan salt)
5 to 6 cinnamon sticks
2 tsp cloves
2 tsp vanilla
1 or 2 cups of raising (Golden or brown it doesn't matter)
3 to 5 pieces of Star anise( Anis Estrellado in Spanish)
1 to 2 tsp of ginger
2 tsp of vegan butter
For more flavor you can marinate your raisins in Brandy liquor and add them with the Brandi too**
A day prior to begin preparing it, you must first prepare the aromatic tea. In a pot you're going to add one cup of water, the cinnamon, the cloves, the ginger and the star of anise and boil for 15 minutes, then transfer this to a jar and put this in your refrigerator. For the rice, put your uncooked rice in a bowl and pour water until the rice is completely covered by the water. Afterwards put the bowl of rice on the refrigerator until the next day as well.
Drain the water from the rice bowl and pour it into the pot with the coconut milk, Vegan butter, the salt and the water, drain the aromatic tea (the spices you put in the day prior) and pour this water into the pot too( leave the cinnamon sticks) in high temperature. Give a good stir, cover your rice and cook for 20 minutes in medium to low temperatures. Remember to add the sugar at the end because if you add the sugar before its cooked, the rice will not cook right. In this 20 minutes check your rice occasionally and stir, you do not want to burn your rice.
When the liquid is absorbed( but not completely because it has to be moist) add the other can of coconut milk, the sugar, and the raisins (you're going to do this in the 20 minutes), at this point stir continuously and let the rice absorb the liquid a little bit more not to much we don't want a dry rice. We are looking for a sticky consistency.
